Goin' Dutch- Pasta al Forno

If you've read some of our former posts, you're probably aware of our hobby of dutch oven cooking. Ben has really been wanting another dutch oven. Back in April or May we picked up a little 10-incher and Ben recently found a 12-incher on craigslist and immediately called on it-- and we got it! We picked it up about 2 weeks ago and have been enjoying it immensely. Our latest foray was Pasta al Forno. It's a pasta & sauce combination that is baked. Thanks Trevor for this great recipe! Yummy!!

Trevor's Pasta al Forno

1/5 cup Olive Oil
2-4 garlic cloves

1 big carrot-grated
1 onion- chopped into small pieces
2-3 stalks of celery -chopped into tiny pieces
salt & pepper to taste
6 strips of cooked bacon- crumbled in little pieces
1 Tablespoon Basil
A dash or two of red pepper flakes (Not on Trevor's recipe, I think it's good though)
2 Cans of Diced Tomatoes (15 oz)
1 Can of Tomato Paste (the little one)

4 Tablespoons butter
4 Tablespoons flour
2 cups milk
Dash of Nutmeg

Penne Pasta

Parmesan Cheese
Mozzarella Cheese

Combine first group in large pot & saute.
Add second group. Cook on low for 45-90 minutes. The longer you cook it the better it is
Make a white sauce out of the 3rd group of items (melt the butter, stir in the flour & nutmeg, add the milk, cook until it thickens)
Cook the pasta until it is "al dente" (not quite soft, almost soft but still chewy)

Layer in the bottom of a 9x13 pan (oven method) or dutch oven (D.O. method)
White sauce first, pasta, red sauce. Alternate. (stir it together a little as you add it)
On the top, sprinkle it with the cheeses.

Bake at 325* until the cheese melts and bubbles, or until you can't wait to eat anymore- whichever comes first.

Goes great with breadsticks.
